Lechon Kawali is the easiest pork dish, for me. You just season the pork with salt and pepper, leave it in the ref for hours or overnight. Then deep fry it in hot oil. Wait until the skin turns golden brown and it pops those crispy bubble-like surface and that’s how you will know it is cooked. Place in on a plate lined with paper towels so the excess oil is absorbed.  Serve lechon kawali with your favorite gravy or your hot and spicy sauces and call your best gang to have a taste. Forget about your diet, this dish should be served on rare occasions because it’s high in cholesterol.  Me and my friends love this with beer in the evenings. It really is the essence of pork meat in a dish. The crunch of the skin will make you wanna close your eyes as you bite it. Ugh! I can almost hear the sound of my friends as they chew it. Satisfaction!
