To once again emphasize the importance of this dish for human health, and a holiday is created - the International Soup Day, which is celebrated on April 5. The history of soup is as old as the history of cooking. The word "soup" comes from the French "soupe", and it - from the Latin "suppa", which in translation - bread, soaked in broth or broth. However, soup as a dish in today's understanding, which became a daily meal, developed five centuries ago with the appearance of strong dishes capable of withstanding the cooking process. In this case, in cold countries and regions, soup originated much earlier. For example, in ancient China it was brewed 100 years before our era. But we are talking about soup, and not about cooking, as a method of cooking for the purpose of heat treatment of products. After all, soup is a "set" of ingredients that create a common taste and composition. And although the ways of cooking, traditions and recipes of soups were formed earlier, but soups became widespread in Europe and Russia by the 18th century. Later this dish spread throughout the world. By the way, in Russia, liquid dishes were first called soup. The word "soup" appeared only in the times of Peter I. Decoction in ancient centuries called meat, fish and vegetable broth. In the national cuisine of any country there are recipes for this dish. Soup is prepared both in summer and in winter. Soups help to saturate and restore strength, increase tone. And doctors are confident in the usefulness of soups, even during illness, prescribing to the patient light broths and vegetable soups to restore strength. According to doctors, soups have a beneficial effect on the digestive system of the body, stimulating the production of enzymes and gastric juice, are the prevention of cardiovascular, gastrointestinal and even oncological diseases. But it is important to remember that one should not abuse meat, fish and mushroom soups for those who have high acidity of gastric juice and people prone to the formation of kidney stones and gout. In the world there are about 150 types of soups, which are divided into more than a thousand species, with each species having options. So, the researcher of culinary art V.Pohlebkin points out 24 variants of cabbage soup and 18 variants of soup. The main types of soups are classified according to the following categories: 1. Cold and hot soups; 2. Caloric content - light and nourishing (rich); 3. The ingredients used are vegetarian (lean) and soups, which contain components of animal origin; 4. By cooking technology - boiled soups and raw; soups-mashed potatoes; refueling or thickened soups; 5. To taste - salty, neutral, sweet. Which soup recipe is the most correct and popular - difficult to answer. Everything depends on the country and personal taste. In the soup there are a variety of components: meat of birds or animals, vegetables, mushrooms, fish, cereals, beans, dairy products, flour products, greens, fruits, berries, spices. Depending on the ingredients of the dish and personal preferences, soups are served for breakfast, lunch or dinner. For example, milk soup is suitable for morning meals, and vegetable and meat are usually served in the afternoon or evening. As for the "nationalities" of soups, among the bright representatives of Russian cuisine are borscht and cabbage soup, hogweed and ears, okroshka and rassolnik ... Georgian soup kharcho and Spanish gazpacho, French onion soup and Danish pea soup with smoked products are also known. Fans of Oriental cuisine know Japanese miso soup, Chinese hogo and Vietnamese pho. And this list can go on for a long time, in the world of thousands of soup recipes. And among the unusual there is a Japanese soup made from noodles and chocolate, a Caribbean soup made from iguanas, a Polish beer soup and an African soup made of coffee, bananas and dirt from the foot of Kilimanjaro. Therefore, celebrating the International Soup Day, of course, a traditional feast, give preference not to the usual soup recipe, but to the refined and unconventional. Bon Appetit!
