So imagine: You're a businessman (or -woman) with your own cafe and work with cryptocurrencies. So you buy goods and sell your stuff for (let's say) - Ethereum. Your problem would be that you could not plan with that because it could be that you pay more for your goods (because the price is high at that moment) and get less for your products (because the price is low when you sell).
