Great day, my dear foodies! This post has been long overdue and has been sitting on my drafts since the first day of the year, and I just want to cross it off my list before the new month unfolds.  ## Homemade Dishes I Prepared Last Holiday. Before I start going through the food, I'll let you in on a small secret. how I was able to cook more than ten dishes by myself for important events and holidays. My sanctuary is my kitchen. I am more focused and productive when I am alone and undisturbed. But with a toddler, being alone and undisturbed is impossible. That being said, I have this so-called **busy two-day preparation** before the event. Two days before the event is *meat day* when I work on all the meat that needs to be marinated. Nothing can beat a well marinated meat, trust me! And a day before the event is *desserts day* when I prepare all the sweet desserts. This gives the desserts enough time to be chilled in the fridge before being served. Let's start with meat that I prepared 2 days prior.  <sub>**Beer brined baby back ribs**</sub> The meat was so flavorful and tender that it fell off the bone with almost no effort.  <sub>**Chicken Cordon Bleu**</sub> <div class="pull-left">This one is very convenient and easy to cook too. I just tossed it in flour, egg and bread crumbs. Put it in tray with baking sheets. Pop it in the oven. No grease Chicken Cordon Bleu ready in no time.  <sub>**Grilled barbecue and Pork Belly**</sub> These two made the night deliciously smoky!  <sub>**Super Crispy Pata**</sub> After the meat is boiled until it is tender, drain it and let it cool. Wrap it with plastic film, and the secret to achieving that crispiness is to deep fry it icy cold. Just be careful with the splatters.  <sub>**Homemade Brownies**</sub> I baked this a day prior, so it will not consume time in the oven during peak hours. And I remember putting this tray full of brownies on the table, but I had already enjoyed half of it before I could even take a photo.  <sub>**Chicken Macaroni Salad**</sub>  <sub>**Buko Pandan**</sub> Cooking the green jelly and letting it cool down and set takes time, so I always prepare this in advance.  <sub>**Maja Blanca**</sub>  <sub>**Mango Graham**</sub> The always present, Mango Graham.😆  <sub>**Baked Penne Pasta**</sub> We have relatives who came over and unexpectedly brought food too, so we end up with so much food on the table that we made a makeshift extension so all the food could fit.  Since the garage is larger than the dining room, we had planned to set up a long table there and serve all the food there, but the smoke from the fireworks caused the air outside to become dusty and hazy. In the Philippines, New Year's celebrations are loud. We stayed indoor and watched the fireworks from afar.  <sub>**Round Fruits**</sub> The night wouldn't be complete without some touches of Filipino tradition. Having 12 round fruits. There's a culture, superstition, belief, tradition—call it what you want—that us Filipinos believe, having 12 round fruits on the table will bring you good luck for the new year. Why 12? 12 symbolizes the 12 months of the year. Round symbolizes unity, whether in coins or money. I can't explain it either; I just put fruits on the table because that's what my mom used to do. lol In addition, the elders teach the children to jump when the clock strikes midnight because they believe that it will make them taller. Jumping in a minute while watching fireworks, while some are tossing coins in the air. That's how we celebrated the new year. No matter the culture and tradition you celebrate to welcome the new year, I believe we are all hoping for the same: good health, unity, prosperity, and happiness.
