Because eating healthy is also delicious. <center></center> <center>[](https://cocinaycomparte.com/recetas/cupcakes-de-crema-de-mani)</center> ***Here is my version of this recipe:*** # INGREDIENTS: *For cupcakes:* 2 ½ Cups of lentil wheat flour (if you want to make it even lighter you can use whole wheat flour and add 1 tablespoon of baking powder). 1 Cup of milk 1/2 cup of butter 1 cup of Stevia or sweetener without calories. 2 egg whites. 1 whole egg 1 Tablespoon lemon zest. 1 Teaspoon vanilla extract. 1 Tablespoon of sunflower oil. 1 Jar of lightberry jam. *For frosting:* 2 Cups of cheese in light cream. 2 Tablespoons of natural light yogurt. ½ Stevia or powdered sweetener. ¼ Cup of powdered peanuts. # PREPARATION *For cupcakes:* 1)Preheat the oven to 150ºC 2)In a bowl place the butter and the sweetener and mix well, until they are 3)Add the egg and the whites, mix well for about 4 min. 4)Add the flour little by little, beating well and alternating with the milk. 5)Add the lemon zest and finally add the sunflower oil. 6)In a mold for cupcakes place the pots, and with a spoon pour the mixture until half of each one. 7)Take to the oven for about 20 minutes. 8)Verify that the cupcakes are ready by introducing a spaghetti if it comes out clean is because they are ready. 9)Remove from the oven and unmold and let cool for a few minutes 10)With the wide part of a pastry sleeve nozzle, cut the center of each cupcake to the bottom half approximately so that there is a hole in the middle. 11)Then with a pastry sleeve fill all the cupcakes with the blackberry jam. 12)Finally with a pastry sleeve decorate with the frosting to your liking.
