酸菜魚這幾年來,在台灣可謂是風頭無兩,可謂近幾年最具人氣的料理,自從第一家酸菜魚餐廳,刁民酸菜魚開始帶動酸菜魚商機以來,陸陸續續有多個品牌,如雨後春筍般出現,像是刁民酸菜魚、姥姥酸菜魚、正太酸菜魚、吾二酸菜魚等不同品牌,最先打響酸菜魚口碑的是刁民酸菜魚,所以知名度較高,刁民酸菜魚是完全學習大陸市場,再帶回台灣,其它品牌也是仿效刁民酸菜魚的經營模式,而每家酸菜魚餐廳的口味大同小異,消費者對酸菜魚,我看來並無品牌忠誠度。

在車站地下商場閒逛時,看到魚你在一起這個酸菜魚品牌,有提供單人份的快餐,正好是中午吃飯時間,於是不猶豫,立刻進去點餐,點了單人份老壇酸菜魚,還送兩個素菜,真是不錯,通常酸菜魚很適合家庭、朋友聚餐,除了份量大及好處理之外,滑順鮮嫩的魚片和酸爽涮口的酸菜是天生絕配,再搭配酸麻濃郁的湯頭,開胃又下飯,但是單人套餐,也有很大的需求,當人數湊不齊一桌時,單人套餐,是最好的選項,每個人可以選擇自己喜歡的口味,也可以解決,有些人喜歡吃狠辣的,但是有些人可能無法吃太辣的口味差異問題,我喜歡大陸這邊的酸菜魚口味,吃起來會麻也會辣,不像台灣多數的酸菜魚餐廳,吃起來只辣不麻,搭配的湯頭,我又添了好幾碗飯,果真下飯。

在廈門這裡,除了魚你在一起這個品牌之外,其它賣酸菜魚的店家其實也不少,就連市場中也有少數的攤商或店面有賣酸菜魚,據網路上的資料,酸菜魚始於重慶江津地區,漁夫將捕獲的大魚賣錢,並將賣剩的小魚與江邊的農家換酸菜吃,漁夫將四川泡菜和鮮魚一鍋煮湯,由於湯的味道鮮美,於是一些小店便將其移植,從而之後發展成酸菜魚,川菜特色本就是麻辣辛香,喜愛吃重口味的老饕,肯定無法抵擋川菜的美味誘惑,這次在魚你在一起的用餐體驗,是旅程中吃的最痛快淋漓的一餐,因為辣得一身汗,又麻得好爽。

In recent years, pickled fish has become incredibly popular in Taiwan. It's arguably the most popular dish in recent times. Ever since the first pickled fish restaurant, Diao Min Asia Sauerkraut Fish, started the trend, many brands have sprung up like mushrooms after the rain. Brands like Diao Min Asia Sauerkraut Fish, Grandma’s Pickled Fish, Pretty Boy Pickled Fish, and My Second Pickled Fish are just a few examples. The brand that first established the reputation of pickled fish was Diao Min Asia Sauerkraut Fish, so it’s the most well-known. Diao Min Asia Sauerkraut Fish completely adopted the business model from the mainland and brought it back to Taiwan. Other brands followed suit, emulating Crafty Pickled Fish’s business model. The taste of pickled fish is quite similar across different restaurants, and it seems consumers don't show much brand loyalty when it comes to pickled fish.

While wandering around the underground mall at the train station, I saw a pickled fish brand called "Fish With You." They offered single-serving meals, and since it was lunchtime, I didn’t hesitate to go in and order. I got a single-serving portion of old jar pickled fish, which also came with two vegetable sides. It was really good. Usually, pickled fish is perfect for family or friends gatherings because it’s large in quantity and easy to share. The smooth, tender fish slices paired with the tangy, refreshing pickled vegetables are a perfect match. The rich, sour, and spicy broth is both appetite-whetting and perfect with rice.

However, there is also a big demand for single-serving meals. When you can't get a group together, a single-serving meal is the best option. Everyone can choose their preferred flavor, which also solves the issue of differing spice tolerances—some people like their food very spicy, while others can’t handle too much heat. I prefer the pickled fish flavors here on the mainland; it’s both numbing and spicy, unlike most pickled fish in Taiwan, which tends to be just spicy without the numbing sensation. With the accompanying broth, I ended up having several more bowls of rice. It really goes well with rice.

Here in Xiamen, besides the Fish With You brand, there are actually quite a few other places that sell pickled fish. Even in the market, there are some vendors or small shops that sell it. According to online information, pickled fish originated in the Jiangjin area of Chongqing. Fishermen would sell the big fish they caught and trade the leftover small fish with farmers for pickled vegetables. The fishermen would then cook the Sichuan pickles and fresh fish together in a pot. Because the soup was so delicious, small shops started offering it, and it eventually evolved into pickled fish. Sichuan cuisine is known for its numbing and spicy flavors, and food lovers who enjoy strong flavors definitely can’t resist the tempting taste of Sichuan dishes. This meal at Fish With You was the most satisfying dining experience of my trip. I worked up a sweat from the spiciness and thoroughly enjoyed the numbing sensation.
