Today I am sharing with you a new and delicious recipe that was part of my lunch yesterday. It was a nutritious and colorful rice with paprika and basil. Many times at home I like to prepare different contours, try new flavors and also take advantage of the food available in the fridge. In recent days, I bought some nice looking fresh basil. I use it for various preparations, green juices, salads, sauces and tortillas among others. Yesterday I wanted to do something different and add the basil before it wilted. In these critical times I have to yield my vegetables, vegetables and be creative in their use. I only added basil, red pepper and salt to this rice. The result was a delicious, colorful and nutritious rice that I loved. My son complimented me on the decoration, texture, consistency and flavor. I hope you can prepare it and try it at home. This preparation yielded four servings. Here is my step by step. ***   *** INGREDIENTS - 1 cup rice - 1 red bell pepper - 100 grams of basil - 2 cups of water - Salt to taste - Olive oil ***  *** PREPARATION Friends, the first thing I did was to wash the paprika and basil well. I let them soak in vinegar for 2 minutes. At the end of the time I cut the paprika and reserved 1/4 of it for decoration. The rest I added to the blender with 2 cups of water, took to process and set aside. On the other hand, I took a small pot over medium low heat and added olive oil to sauté the rice a little. Es un gusto saludarlos este sábado. Hoy compartiendo con ustedes una nueva y deliciosa receta que fué parte de mi almuerzo de ayer. Se trató de un nutritivo y colorido arróz al pimentón y albahaca. Muchas veces en casa me provoca preparar contornos diferentes, probar nuevos sabores y también aprovechar los alimentos disponibles en la nevera. En días pasados, compré albahaca fresca con lindo aspecto. Esta la utiluzo para diversas preparaciones, jugos verdes, ensaladas, salsas y tortillas entre otras. Ayer quise hacer cosas diferentes y agregar la albahaca antes de que se marchitara. En estos tiempos críticos tengo que rendir mis vegetales, verduras y ser creativa en su utilización. Les cuento que este arroz sólo le coloqué albahacas, pimentón rojo y sal. El resultado un delicioso, colorido y nutrivo arróz que me encantó. Mi hijo me felicitó por la decoración, textura, consistencia y sabor. Espero puedan prepararlo y probarlo en casa. Esta preparación rindió para cuatro porciones. A continuación mi paso a paso. INGREDIENTES • 1 taza de arróz • 1 pimentón rojo • 100 gramos de albahaca • 2 tazas de agua • Sal al gusto • Aceite de oliva PREPARACIÓN Amigos lo primero que realicé fue lavar bien el pimentón y la albahaca. Dejando remojar en vinagre por 2 minutos. Al cabo del tiempo corté el pimentón y reservé 1/4 del mismo para la decoración. El resto lo agregué a la licuadora con 2 tazas de agua, llevé a procesar y reservé. Por otro lado, tomé una olla pequeña llevé a fuego medio bajo y agregué aceite de oliva para sofreír un poco el arróz. Una vez caliente agregué el arroz y dejé hasta dorar. Posteriormente, agregué el contenido de la licuadora al arroz, la sal y llevé a fuego medio. En ese momento, colé la albahaca y corté de forma pequeña. Cuando el arroz había consumido 70 % del agua lo agregué. En ese momento, coloqué a fuego bajo y tapé hasta que el arroz estuvo listo. Dejé reposar por 15 minutos. Al momento de servir el arróz, decoré con pimentón fresco cortado en tiritas y hojas de albahaca. Me encantó su sabor, consistencia, color y aspecto. Procesar el pimentón fué una excelente idea para que este vegetal tan nutritivo pudiera consumirse en su totalidad.
