You can do it in two full days but it's nice to have the extra days in case of the weather and to revisit your favorite sites -- especially if you're into photography. It's a once in a lifetime visit so it's unlikely you'll visit again so you might as well have the extra days. You can take a tour of the island but I would recommend renting a car and taking a self tour. Once the random tour bus leaves, you basically have the entire archeological site to yourself. It was amazing not having to deal with other tourists. You can bring your own food if you're being super thrifty or on a budget but I didn't find the food to be outrageously expensive. LATAM also lost my luggage and since there's only one flight to the island per day... it took a couple days for my luggage to finally arrive. Finally, if you're the type of person who goes to Stonehenge and complains that they're a bunch of rocks and it's a waste of time then don't bother with Easter Island. You're going there to see the moai statues and there's not a lot else to do on the island besides maybe hiking, fishing, scuba diving, and some surfing. The island is volcanic so most of the coastline is rocky cliffs. There's only one small beach on the entire island so everyone goes there. This isn't a beach vacation. https://s2.postimg.org/qrz71l0x5/Minnow3.gif
