Finally getting my chanterelle fix for the autumn season. I’ve been dreaming of this risotto for weeks and eventually babe sourced them mushrooms for me at the third supermarket we tried. I obviously prefer the ones found in the home forest but I’m not there now and apparently it’s not the best year for mushrooms because the summer was so hot and dry. Mushrooms like it more *moist.*

Chanterelles are the only mushrooms I eat, and usually in a risotto or on top of rye bread, I’m picky like that. I made sacrifices by getting the supermarket kind that came all the way from Estonia, and were so dirty I had to wash them, but still, the end dish fulfilled my needs. A perfect chanterelle risotto for the early autumn Saturday, of course paired with wine and good company.
