Here is a bisected potato and the blue potatoes ended up being...purple.

Earlier this year I decided to grow potatoes, and not just any potatoes but blue potatoes.  My niece's favorite food is mashed potatoes.  I was going to buy them from the tractor supply store, but our local nursery carried seed potatoes too.  Sadly, it is best to pay a premium for seed potatoes as the potatoes (not that I seen blue/purple potatoes in a store) you buy in the store can be sprayed with some type of retardant to prevent them from sprouting.  Though I do have a small section in the garden for store bought potatoes/sweet potatoes that did sprout from storage.

  I am quite surprized that we got any.  I try not to use chemicals in the garden (save for dealing with white mildew on pumpkins), and certainly don't use pesticides.  Normally I don't care about what foilage the caterpillars, carolina locust, and Japanese beetles eat.  But the Colorado Potato beetle, well they have a voracious appetite-especially their ugly looking larva.  and before I knew it the plants were dead.  Luckily the potatoes were fully developed at this point.    My niece doesn't like dirt at all, but for the potatoes she decided to get her hands dirty and help out....even as it started raining out.  Supposedly there is variety of [white] potatoes (king Harry) that is claimed to be resistance to colorado potatoe beetles, but they tend to be more expensive.

These were what were picked in a 4 foot section of a row.  There's maybe 20 small potatoes there.  We have maybe a 20 foot section left.

And here is what they looked after mom steemed them and added milk & butter.  Kind of a mauve color and doesn't look too appetizing.  They still tasted good,  and it is a novelty food that not too many people will have.  Maybe there is a variety that would retain its color better after steaming, idk.    Basically the vegetables for 8 meals in about a 4 foot garden row space.   Not bad for the space.

  If only we believed in frying with oils maybe we could have purple french fries or purple potatoes chips.
