HAPPY NEW YEARS, everyone! It’s been a crazy couple of weeks around our homestead. The days kept flying by quicker and quicker, but we finally have water flowing again. 😊

Its gross and muddy right now, but it will be clear again soon and we’re looking forward to years of running water before we have to spend a small fortune to do another well-pump replacement and that’s a blessing. This year has already started better than the last. This is the year of blessings for us, (I’m speaking it into existence,) now we just need to find a new-to-us vehicle, stove, … oh never mind, the list is pretty long, the funds aren’t at hand right now for any of them, but we’ll replace them one by one as they become available, and until then we’ll carry on. 😊

We were blessed to find a lady selling a small Instant Vortex air fryer on Facebook and decided to test out our new-to-us appliance with Tater Tots and chicken strips. They turned out great, crispy outside yet soft in the middle, perfection. 😊

It also came with a rotisserie, so we decided to try some of our garden potatoes and a couple of chicken thighs in that for supper one day this week. They turned out fantastic as well. We’re really enjoying our Instant Vortex, how quickly it cooks everything, and the easy cleanup afterwards is pleasant surprise too. Watch out roosters, we may have to dispatch a few for some future tasty meals soon, good thing we now have a few spares…that one that came at me this morning comes to mind right now, but I’m sure there’s at least two aggressive ones that will make lovely roasted chickens. 😊
