As a big fan of Eggs Benedict, I really struggle to find a place in Chiang Mai that can make this dish correctly.  I found a spot that specialized in "late breakfast and brunch" and the Eggs Benedict is featured prominently on both their menu and advertising materials.  The pictures looked fabulous and i decided to give it a go.  I was let down badly again.

First off, I do realize that this is in fact eggs Florentine and not eggs Benedict.  There isn't much difference between the two other than the fact that Florentine has spinach and Benedict typically has ham.  

At this point i was impressed because it actually ended up looking like the pictures on the menu, so we were off to a good start.   However, almost immediately i was let down as the most crucial part of making this dish what it is supposed to be is by properly poaching the eggs.

When you chop into the egg it should be a near explosion of runny yolks, thereby covering the rest of the dealio in runny gooey deliciousness.  However, they screwed this extremely important part of the process up.   

While English Muffins are an extreme rarity over here and i don't expect to receive that, i do expect the bread to be toasted and not chewy.  This bread was chewy and actually quite difficult to cut.  There were times i was fearful I was going to accidentally make a piece go flying across the restaurant.

The "nail in the coffin" for this dish was the hollandaise sauce, which was bland and kind of seemed like it was an instant mix rather than made on site.  

I'm starting to think that I am not going to get this dish made correctly and was even starting to feel as though I could be in the wrong about how this dish is actually meant to be.  However, as luck would have it, a friend of mine who is a professional chef met up with us about halfway through my meal.  He confirmed that my expectations of the dish are correct and he also felt the hollandaise was not good at all.  

So this was a disappointing experience yet again and the search goes on for a proper eggs benedict / Florentine.
