Depending on the portion size, this can serve as the main entree or an appetizer.</p> <h2><strong>Ingredients:</strong></h2> <p>1 Chicken breast, <em>sliced</em></p> <p>1 roma tomato <em>(thinly sliced edges)</em></p> <p>Thinly sliced mozzarella<em> (or other choice of cheese)</em></p> <p>Basil leaf to garnish <em>(per roulade)</em></p> <p>2 slices of bacon <em>(1 bacon per roulade)</em></p> <p>Salt, <em>to taste</em></p> <p>Black Pepper, <em>to taste</em></p> <p>Toothpick (to hold the wrapped roulade together)</p> <h2>Directions:</h2> <p><br></p> <h3>The Chicken</h3> <p>1. With the chicken breast, place a plastic wrapping on top and then flatten the chicken with a meat pounder.</p> <p>2. Cut the chicken breast in half to serve two <em>(this may be main entree portion size, for appetizer size, cut it into four pieces)</em>.</p> <p>3. Salt and black pepper the chicken pieces.</p> <h3>Cheese + Tomato</h3> <p>4. Cut two thin mozzarella slice that is about 1.5 inches in height and 1/4 in thickness.</p> <p>5. Cut roma tomato in half and then cut a slice off. With the slice, cut the skin edge portion. This edge portion will be used in the middle of the roulade.</p> <h3>Bacon</h3> <p>6. Heat pan to medium or medium-high heat. Then take the bacon slices and cook the bacon in pan for short 3-4 minutes, but do not let the bacon crisp too much. </p> <p>We need it to be flexible enough to wrap around the chicken, but crispy enough so that it doesn't get soggy when baked in oven. </p> <p>Put bacon on paper towel to let cool and soak any bacon oil.</p> <h3>Wrapping it Together</h3> <p>7. First lay the chicken breast. </p> <p>Then put the mozzarella and tomato slice in the center lengthwise. </p> <p>Then wrap the chicken as best as you can. </p> <p>Then take the bacon and roll/wrap the chicken with the bacon. Put toothpick through the middle to hold together. You may need to use two toothpicks to hold it together.</p> <h3>Baking the Roulade</h3> <p>8. Preheat oven to 400 degrees F. </p> <p>Take the raw chicken roulade and put into oven and bake for 25 minutes (or until cooked well).</p> <p><br></p> <p>Any questions, let me know!
