Qurator's: Hive Top Chef! | Tofu | My version with chickpeas

_<div class="text-justify">Greetings dear friends, welcome to my blog. Today I am once again joining the weekly contest [Qurator's: Hive Top Chef! | Tofu](https://hive.blog/qurator/@qurator/qurators-hive-top-chef-or-tofu-swzu93). Tofu is a type of soy-based vegan cheese, it is the original recipe if I'm not mistaken. I have always wanted to try it, but unfortunately it is not easy to find, at least not in my city. However, fortunately we can prepare tofu with other ingredients and these are the grains. For this challenge I decided to use chickpeas, a very versatile legume in the kitchen.</div>_

<div class="text-justify">Chickpeas can be used to make soup, stews, creams, croquettes and also tofu. In itself it has a delicious flavor, which means that with any recipe we will pamper our palate.</div>

## Ingredients

<hr>

<div class="text-justify">- 1 cup chickpeas</div>
<div class="text-justify">-  2 cups of water</div>
<div class="text-justify">-  85 grs of onion</div>
<div class="text-justify">- 26 grs red pepper</div>
<div class="text-justify">- 1 clove garlic</div>
<div class="text-justify">- 2 teaspoons cumin</div>
<div class="text-justify">- 1 teaspoon turmeric</div>
<div class="text-justify">- 4 tablespoons of soybean oil</div>
<div class="text-justify">- Salt to taste</div>

## Preparation

<hr>

<div class="text-justify">1.-. Wash the chickpeas and soak them the night before preparation, at least 12 hours, if more, much bett.</div>

<div class="text-justify">2.-. Wash the paprika, cut it into pieces as well as the onion and garlic and put them in the blender.</div>

<div class="text-justify">3.- Wash the chickpeas and place half of them in the blender.</div>

<div class="text-justify">4.- Add salt, cumin, turmeric and half of the water. Blend until the chickpeas are well ground.</div>

<div class="text-justify">5.- Add the rest of the chickpeas and the water, also a teaspoon of cumin and the 2 tablespoons of oil. Repeat the blending process until the chickpeas are well ground. It is important to correct the salt level, add more if necessary, it is to our taste.  Pour the mixture into a pot.</div>

<div class="text-justify">6.- Cook over medium-low heat, stirring constantly to prevent the mixture from burning and to keep it fluid. The liquid will dry to a thick consistency. Turn off the heat, then place the mixture in a mold and let it cool to room temperature. To make it easier to remove from the mold, use waxed paper or any other paper of your preference.</div>

<div class="text-justify">7.- Once the tofu has cooled, unmold it. Then we cut it into pieces and fry it in a frying pan over medium-low heat. I used two tablespoons of oil because I fried only a few pieces, the rest I kept in the fridge.</div>
