Bendecido y maravilloso día, un placer volver a compartir con ustedes, en esta oportunidad les comparto la receta de unos espaguetis con salsa de tomate, acelga y zanahoria ideal para un almuerzo, las acelgas son una fuente de vitaminas, minerales también contiene fibra, proteína en fin su consumo nos aporta muchos beneficios, aquí les muestro el paso a paso.

- 200 gramos de pasta 
- 300 de acelgas
- 1 zanahoria pequeña 
- 1 cebolla 
- 1/2 tallo de ajo porro 
- 1/2 pimentón
- Una ramita de cilantro 
- 3 dientes de ajo 
- 3 tomates
- Sal y pimienta al gusto 
- Perejil seco
- Aceite de oliva

Preparamos la pasta colocando en una olla suficiente agua al hervir agregamos la pasta le añadimos sal y cocinamos hasta que esté al dente colamos y reservamos.

Para preparar esta salsa lo primero que haremos es lavar bien los vegetales a utilizar, las acelgas separamos las hojas de los tallos y cortamos las hojas en tiras y el tallo lo picamos  pequeñito; la zanahoria la cortamos en cubitos, picamos el cilantro pequeñito reservamos; los aliños lo picamos con ayuda de un procesador de alimento también lo pueden cortar pequeñito con un cuchillo, licuamos los tomates con 1/4 taza de agua y colamos, en una paila colocamos un chorrito de aceite y ponemos a sofreír el aliño.

Trascurrido 3 minutos colocamos los tallos de las acelgas salteamos por unos minutos, luego agregamos la zanahoria cocinamos por 3 minutos y colocamos la acelga mezclamos.

Añadimos sal, pimienta mezclamos por unos minutos más le colocamos el tomate cocinamos por aproximadamente 5 minutos y agregamos el cilantro, el perejil mezclamos para que se integre bien los ingredientes.

Por último colocamos la pasta mezclamos para que se integre bien los sabores  y retiramos del fuego.
