<h1>I was finally able to give this BBQ pulled pork sandwich recipe a try. But I didn't use pulled pork. I used something called *jackfruit* as a substitute. Although it is a fruit, is lends itself well to soak up other flavors, like BBQ sauce. After cooking it for a while, it breaks down into the consistency of pulled pork.</h1> <center></center> <h4>I got the jackfruit in *brine* from Trader Joes. Most recipes call for water as the liquid, or fresh is best, but this worked out pretty well for the first time.</h4> <center></center> <h4>Just drain and rinse and then spice em' up! For spices I just used some chili powder, garlic powder, paprika, salt, pepper, and a little cayenne pepper. For the slaw I used a shredded cabbage and carrot with the some mayo and mustard and salt and pepper.</h4> <center></center> <h3>I could definitely have shredded the jackfruit up more to get the real *shreddyness* you get with real pulled pork, but we were hungry and didn't care so we called it good.</h3> <h3>The only thing I would have added would have been pickles. It would have been 5 stars for sure with a little bit of pickle acid to cut some of the bbq and slaw. But it was good enough to definitely make again.</h3> <center></center> <h3>I was pretty impressed with the quality of these pictures too. I just got the iPhone 8 and so far I haven't had many complaints. The camera seems to do these close up shots fairly nicely.</h3> <center>*Have you ever tried jackfruit before?*</center>
