Helloooooooo! My dear friends from Hive!
The quesillo is a delicious dessert, very easy to prepare and does not require many ingredients, as well as a variant that can be made in different flavors. Today I present one of them and it is the squash cheese, in this case I will not use condensed milk and it will be replaced by powdered milk and common sugar.

El quesillo es un postre deliciosos, muy fácil de preparar y no requiere de muchos ingredientes a demás cuenta con la variante que se puede hacer de diferentes sabores. Hoy les presento una de ellas y es el quesillo de auyama, en este caso no uilizaré leche condensada y será sustituida por leche en polvo y azúcar común.

1/2 kg of pumpkin
8 heaping tablespoons powdered milk
8 heaping tablespoons sugar
5 eggs
1 tsp vanilla
1 cup of water
1/2 of additional sugar for the caramel

8 cucharadas colmadas de leche en polvo
8 cucharadas colmadas de azúcar
5 huevoa
1 cdta de vainilla
1 taza de agua
1/2 de azúcar adicional para el caramelo

<strong>PREPARATION:</strong>
</center>

- The first thing we will do is clean and peel the squash. We wash it and chop it into small pieces.
- In a pot we place the pieces of squash and cover with water, do not add excessively, just until they are covered.
- We place the vanilla, cover and cook over medium heat until softened and reduce the largest amount of liquid.
- We will know that it is ready when we mash it on a fork and puree it.

- Lo primero que haremos será limpiar  y pelar la auyama. La lavamos y picamos en trozos pequeños.
- En una olla colocamos los trozos de auyama y cubrimos con agua, no echar en exceso, solo hasta cubrirlas.
- Colocamos la la vainilla, tapamos y cocinamos a fuego medio hasta ablandar y reducir la mayor cantidad de líquido.
- Sabremos que está lista cuando aplastemos en un tenedor y se haga puré.
- Apagamos y dejamos enfriar.

- Then we add the mixture and we take it to a bain-marie for 1 hour.
- A very important tip is to have the previously hot water for the water bath and immerse it immediately with the mixture.

- Ahora preparamos el caramelo.
- En una quesillera agregamos la 1/2 de azúcar, cuando enpiece a dorar apagamos y rodeamos toda la quesillera.
- Luego agregamos la mezcla y llevamos a baño de maría por 1 hora.
- Un tips muy importante es tener el agua previamente caliente para el baño de María y sumergirlo inmediatamente echada la mezcla.
