No veggie blog would complete without the obligatory 'smashed avocado noms' post, right? Soo at the risk of being 'basic', here is mine!  It is absolutely delicious and feels oh so nourishing to eat first thing in the morning. With all those healthy fats and vitamins you'll be set up well for the day. What you'll need: 1 small avocado 1 slice of seeded wholemeal bread 1 tsp olive oil Salt Black Pepper Paprika Mixed seeds Instructions: - Toast the bread. - Cut, pit and skin the avocado. - Put onto the toast and using a fork, smash it evenly. - Drizzle with olive oil. - Grind a little pepper, salt and paprika on top. - Garnish with a scattering of mixed seeds.
