 # Brioche Buns! so I said I was going to cook new stuff every day and I kind of have but I failed to write everything I was doing here on steemit. Anyway moving on this is a brioche bun recipe I was trying out. ### Ingredients: - 410g eggs - 80g sugar - 200g milk - 16g bread yeast - 700g flour - 20g salt - 200g butter - oil in spray form ### Simple Recipe Steps: 1) mix (360g egg, 150g milk, 80g sugar, 16g yeast) until dissolved 2) add in (700g flour, 20g salt) slowly 1 spoon at a time at low speed 3) add 200g cold butter and knead at medium speed for 25 minutes 4) place in a flat bottom container with oil spray and cling film on top in the fridge (at least 1 hour and up to 24 hours). 5) cut into 80g portions using scissors, 80g will work for 10cm diameter rings. 6) from into dough balls then place in oiled rings and flatten with the bottom of a bowl so it fits the ring, then let prove for 2 hours, they should double in size. 7) Heat oven to 347ºf/ 175ºc, apply egg wash (half egg/half milk) and bake for 10-15 minutes. **tip, cook in a humid environment for the first 4 minutes by placing a pan of hot water in the oven.** 8) once baked and chilled place in a ziplock bag to soften. here are some pictures I took while cooking with my iphone:      ![IMG_4494.jpg] (https://cdn.steemitimages.com/DQmZZphsiUjjb9TYyHt56j4ua1sL1udEpM2jdygALSzhcZK/IMG_4494.jpg) ## This is what I used them for: Insanely tasty burgers!  In conclusion, it was a good recipe, Although I did have to change one thing the original recipe said 1 hour of proving was enough but it was not I found the buns did better with a longer time like 2 hours.
