Comparing Omelettes: Duck Egg Vs Chicken Egg
My husband and I finally did a taste test to compare the flavor of store bought chicken eggs to fresh duck eggs from our newly laying backyard ducks. My husband makes really great omelettes so he did almost all the cooking and I took pictures. One omelette was made from duck eggs and the other was made from chicken eggs. Both omelettes were made with the same ingredients, using the same steps.

My husband is a pretty picky eater so I suggested he do a blind taste test. In my head I figured he'd cover his eyes and I'd feed him a bite of each so he wouldn't know which he was eating....Yeah, my genius husband instead scrambled the duck and chicken eggs in two different containers then forgot which was which because they looked exactly the same so neither of us knew which we were eating. We figured it out after after a while because fresh eggs cook up different and because the taste is noticeably different.

We didn't know which eggs were which when my husband poured them into the pan and started cooking them. He cracked a few eggs into a bowl, scrambled them, and added a splash of milk. He did this twice to make one bowl of duck egg and one bowl of chicken egg. Once the eggs started cooking my husband loaded the omelettes in the center with bacon, sausage, cheese, and tomatoes (on half because I don't like tomatoes in mine). Each omelette was cooked in a bit of bacon grease because that's how we roll in the south. 

As each was cooking I could tell they were different. One seemed really fluffy and light colored. We both agreed that was probably the duck egg because it was freshly laid that morning. As someone who has only had store bought chicken eggs, it was really interesting to see an egg so fluffy and puffed up while cooking. The chicken eggs were different. They thinned out more and had a brighter yellow color. The chicken egg omelette bubbled up way more in the middle and stayed flat.

# How About The Taste Difference?

Okay so here's my deal with eggs. I really don't like eating eggs by themselves. I never have. I usually have to have bread to put them on to enjoy them. My favorite way to eat an omelette is to put it on toast, spread a little grits on the toast, then put some omelette on the toast like an open faced sandwich. There are so many flavors that way playing together. 

By the time we ate I knew which was which. If I didn't know, it would have been easy to tell. To be honest, both tasted exactly the same. Eggs are eggs. There is no difference in taste between a chicken or a duck egg. At least with a loaded omelette with cheese, bacon, and sausage there is no noticeable taste difference. What was easy to notice was the texture of the egg. The chicken egg was thinner and therefore got crispy in parts while cooking. It had a tougher feel in my mouth. It was somewhat plastic-like in how chewy it was. The duck egg was really light and soft. It felt more delicate in my mouth. I could tell as I took bites that the egg was fluffier and thicker the bite through.


# The Winner?

Overall, the duck egg cooked up way better. I do think the freshness of the egg played a role in this though. Store bought chicken eggs can be a few months old for all you know when you buy them. Chicken eggs are not fresh. They've been sitting in a fridge for a while. My duck eggs were laid this week and had never been refrigerated. Because they were so fresh, they made a much better omelette in terms of texture. Both types of eggs tasted the same. Duck eggs win because of their freshness making a fluffy and melt in your mouth textured egg.
