Likkle Dis and Likkle dat!

Greetings to one and all.   
Likkle dis and likkle dat” is an expression we use in Jamaica πŸ‡―πŸ‡² to mean , a little bit of everything. That was the plan for this post but I’ve decided to save some for later πŸ˜€. Well ,it is  another Friday and you know what time it is! It’s time to thrown down on what went down over the past week.

First up,I went to a gathering and tasted some  delicious chicken which was cooked by one of the senior teachers. When I meet upon good food, I want to try it and add my own flavor to it. Like any foodie would, I got that recipe and went to work. 
Ginger, soy sauce, sake , garlic πŸ§„, sesame seeds, flour, πŸ₯š. I added some (Jamaican chicken seasoning, some jerk powder and a bit of Cajun seasoning.) 
- I sprinkled the powdered seasonings on the chicken and rubbed them in vigorously. 
- I blended the garlic ,ginger and sake (mirin). Mirin is a sweet cooking alcohol used in Japan. 
- Next, I poured the mixture on the chicken wings and let it marinate for as long as you want. 
- I then added some flour, added spices to the flour and a couple eggs and made a batter (I also added a bit of corn starch- I like my chicken crispy) 
- Dip the chicken in the batter 
- sprinkle sesame seeds (black or white) 
- deep fry till crisp

This is how it came out, I fried it in a pressure pot.It wasn’t bad but it wasn’t excellent. It was not a perfectly reproduced taste or huge improvement on the so I will have to go back to the counter and try again.  I might have fried it too long and did a bit too much with the other seasonings. It might have been better to go for the simple taste. It was however, good enough for country. πŸ˜€ 
The chicken in the foreground on the other hand was wonderful. It was deep fried and then set to simmer in a homemade bbq sauce. That was crispy and good. Feast your eyes on the table.

てばもと12ほん - 12 Piece of drumsticks 
 γ“γ‚€γŽγ“γŠγŠγ•γ˜οΌ” - 4 cups of flour 

 γ—γŠγ“γ—γ‚‡γ†- salt and pepper 
 γŠγ•γ‘γŠγŠγ•γ˜οΌ‘- 1 cup of sake 

 しょうゆ40cc - 40 CC of soy sauce 
 γΏγ‚Šγ‚“οΌ’οΌcc-  1/2 of that in mirin 
 す10cc - 10cc of vinegar 
 γ•γ¨γ†γŠγŠγ•γ˜οΌ‘- 1 table spoon of sugar 
 γΏγšοΌ“οΌcc- 30 CC water 
Mix your salt and pepper in with that chicken 
Dip it in the flour and deep fry. 
After that remove the oil and cook down the chicken in the soy sauce, water, mirin ,sake  and vinegar. Add that sugar for the final bit of sweetness and finesse. Voila! It’s easy and it’s good.
