These cookies are hard and crispy but they melt in your mouth. I swear you need to try these!  I ordered some new cookie cutters from Wish and had to try them out right away. They were super cheap and can we please just take a moment to appreciate how cute they are? My favourite is for sure the Apple logo one because I love Apple and have many of their products therefor a post about Apple Watch is coming very soon so if that’s something you are interested in stay tuned.  When I was little I used to eat cookies like this all the time. That’s why I wrote they’ll bring you back to your childhood. At least that’s what they do for me. The best thing about these cookies is that they are very customizable. You can make them taste however you like. I usually just leave them plain but what you can do is substitute almonds with whatever nut you like. The other day I made them with hazelnuts and they tasted absolutely phenomenal. Some other good additionals would be cacao powder (if you wanna make them taste chocolaty which we all know I’m all about) or you can play around with some dried fruits which I haven’t tried yet but I think it would make a great pop in texture so if you like dried fruits definitely give it a try.  <strong>Recipe:</strong> • 250g flour • 2 tsp baking powder • 180g vegan margarine • 120g powdered sugar • 100g grounded almonds (or nuts of choice) • 3 tbsp vegan milk • ½ tsp cinnamon <strong>Method:</strong> 1. Put all ingredients into a large bowl. Knead everything together until it starts to form a dough. 2. Sprinkle some flour onto the surface so the dough doesn’t stick. Then put the dough on and roll it out with a rolling pin. Roll the dough out pretty thin. 3. Cut the cookies using cookie cutters. 4. Put them on a baking tray and bake them at 180<sup>o</sup>C for about 12 minutes or until they are nicely brown on the ouside. 5. Let them cool down, then serve however you like and enjoy! <strong>Note:</strong> If you want to make them into so called “Linzer Augen” take two cookies, some jam spread it onto the cookie and add another cookie on the top.
