Fun Funnel Cakes
If you have a hankering for this decadent carnival food, you don’t have to wait until your next fair/carnival/festival to indulge. You can make this sweet treat at home, and you don’t even need a funnel!

Ingredients:
- 2 cups canola oil (for frying)
- 1 ½ cups milk
- 2 eggs, beaten
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon cinnamon
- 2 cups of flour
- ¼ cup powdered sugar for topping

1. In a large bowl, whisk together milk and eggs. In a separate bowl, combine flour, baking powder, salt, and cinnamon.
2. Mix dry ingredients into wet ingredients. The batter should be smooth and somewhat thin, if it is too thick, add a splash of milk and continue to stir. Allow batter to sit for 30 minutes. 
3. Heat the canola oil in a medium skillet on medium heat.  
4. Transfer the batter into a large ziplock bag and squeeze into a bottom corner of the bag. Snip a small amount from the corner and use this to pipe the batter into the hot oil, piping about ½ cup of batter per funnel cake.
5. Fry for about 3 minutes, then flip using tongs. Fry for an additional 2 minutes. 
6. Drain the excess oil out of the funnel cake by allowing it to cool for 2 minutes on a paper towel. 
7. Sprinkle with powdered sugar.
8. Repeat steps 4 through 7 until no batter remains.
