Brown sugar cannot be substituted for its lighter cousin, white sugar, because brown sugar contributes moisture to a recipe, as well as sugary sweetness. Instead of abandoning the quest to sate your sweet tooth, you can always make your own brown sugar. It will always be at a 1:1 ratio. Combine the sugar and molasses in a mixing bowl and beat on medium with an electric mixture until fully combined, about 7-8 minutes.
