* **Crispy fried wontons** are a popular Thai-style street food snack. They are made by wrapping various fillings in wheat-based wonton wrappers and then deep-frying them until crispy. They are typically served with a dipping sauce. ___  ___ * Today, after I picked up my children from school, I prepared these crispy fried wontons for them once we got home. This time, I used sausage as the filling. It was a red-colored sausage made from a mixture of flour and chicken. I experimented with wrapping the wontons into flower shapes*specifically, roses and chrysanthemums making this simple dish even more appealing. Initially, I looked up several folding techniques, but I chose these two as they seemed the most interesting.๐ ___ **INGREDIENTS**  * Wonton wrappers * Sausage * Vegetable Oil for frying * The favorite dipping sauce ___ **INSTRUCTIONS** **The Wrapper**  * I used store bought wonton wrappers,made from wheat flour. When fried, they become puffy, achieving a light crispiness that stays crunchy for a long time. ___ **The Filling**  * I used short,red sausages. I removed the casings and broke each sausage into two pieces. The size was just right for creating the flower pistils. ___ **Assembling the Shapes**  * For the **rose shape**, I used two wonton wrappers, trimmed into circles, to make one rose.  * For the **chrysanthemum shape**, I used one wrapper and a skewer to help form the petals. I followed the steps shown in the reference images to fold them. ___   * Here are the finished rose and chrysanthemum wontons, ready to be fried. ___ **Frying**   * I carefully placed the assembled wontons into medium-hot oil.While frying, I gently spooned the hot oil over the tops of the wontons until they turned a golden-brown color and became crispy. Then, I removed them and let them drain on a wire rack to remove excess oil. ___ **Plating**   * I arranged them on a plate. ___ **Serving and Enjoying**  * In Thailand,these are often eaten as a snack, appetizer, or side dish. They are dipped in various sauces to enhance their flavor. I served them with a dipping sauce that was sweet,salty, slightly sour, and with just a hint of spiciness that my kids could enjoy. ___ **Yummy!!โ**  * The textural contrast between the light, crispy exterior and the soft, savory filling inside is delightful, and it pairs perfectly with the dipping sauce. ___ ___
