Smokies are Going to Freezer Camp!
Well, today is the day that our smokies are all done and ready to go into the freezer. I have been looking forward to this day for awhile because I have been excited to try them.  (Ok confession, I have already gone down to the root cellar for a little early taste testing) 
So first of all I went down to the root cellar to grab them all from their home on the conduit that they had been resting upon for the last three weeks curing. ![DSC01165.JPG](https://steemitimages.com/DQmTowcud4p58ZogvcSLvyhnPASEevJSAT8Mz6mgz8N16bp/DSC01165.JPG) With these little guys I got lucky because they were not molding so that saved the time of de-molding them. Actually I was really lucky because all the large ones are molding already. (Probably because they aren't completely cured.)
 With the smokies we will be leaving the casings on them for two reasons. #1 It would take a lot of time and it really is not necessary, and #2 they were stuffed into natural casings so you can safely eat it.

Who knows how long they will last.
 Another fun thing to do with these is cut them into little slices like you would slice the big sticks of meat.
