Known locally as kurakkan pithi, finger millet flour has long been a staple in traditional Sri Lankan cooking, thanks to its exceptional nutritional value. Rich in fiber, iron, and calcium, it aids digestion and strengthens the body—especially valuable for growing children, the elderly, and anyone seeking a natural energy boost. Whether you're planning to make roti, porridge halapu or a sweet treat, finger millet flour beautifully combines health and heritage. Today, before preparing a delicious recipe using this ancient grain, let us take a moment to appreciate the value it brings to our daily meals.   # Ingredients... 🌺 1 Cup of millet flour. 🌺 1 Cup of Wheat flour. 🌺 1/2 Cup of sugar. 🌺 Some hot water and water . 🌺 A pinch of salt. 🌺 2 Cup of Grated Coconut  # The order of preparation. First, take a pan and place it on the stove to heat. Add the desired amount of sugar. Once the sugar melts and turns golden brown, add about half a cup of hot water. Then add the remaining sugar and allow it to caramelize.  Next, add a pinch of salt and some grated coconut to the mixture. Mix well and cook until the mixture slightly thickens. Then remove it from the heat.  Now take a bowl and add finger millet flour, wheat flour, 1/4 teaspoon of salt, and the previously prepared sugar-coconut mixture.  Next, mix it well while gradually adding water, and knead it into a smooth, non-sticky dough.  Next, shape the dough into small balls and flatten them slightly using banana leaves or kandha leaves, as shown below.  Next, place them in a steamer and steam for about 20 minutes. Then, they will be ready to serve.
