Today i am learning how to preserve dried tomatoes in oil

We have an excess of tomatoes at the moment and there is no way I am letting any go to waste!  

To prepare them, slice, sprinkle with natural salt & dry for 12h at 65°C in the dehydrator.

The only essential ingredient is the oil, but garlic & basil is recommended, along with any extra herbs you feel like.  Everything on that cutting board came from the garden.

This is what it looks like when finished.

Should be good for winter, stored in a cool dark place.  

Not exactly sure what one eats it with, but Sabrina is pretty amazing at figuring out that bit ;)

Will let you know what it tastes like in a few months!
