Spinach can be used in so many different ways. It is the easiest to cook. Yesterday, I made a spinach curry which my mother had taught me but what she cooked usually has more taste, according to me. ( My late brother and I used to come home after school, rush to see what she had cooked for the afternoon lunch and if it was spinach curry, we took bread slices, kept a spoon or two of the curry and some pickle as well and ate with so much delight. She used to enjoy the way we praised her cooking. )  Farm fresh spinach Slice it well and cook it along with Tuvar dal(split pigeon peas), salt, and turmeric powder  Dry fry about four dry red chilies and about 10 gms of Urad dal(split black gram) and blend it with half a cup of fresh coconut.  After the spinach is cooked, add this paste and mix well. Let it boil for a few seconds more and then transfer it to a serving dish. Optional - you can season it with mustard seeds and red chilies and also add curry leaves. This can be had with rice or chapathi or anything you like.  Those who do not like spice can reduce the number of red chilies. Image source - sayee
