Salsa is poured over warm, runny fried eggs and refried beans that are gently cooked tortillas, creating a truly delicious Mexican breakfast dish. It always strikes the right note.  <br> I'm going to show you how my mom cooked huevos rancheros today. By the way, I only am cooking two tortillas, so I froze the other tortilla balls. Flatten the tortilla ball either using a tortilla press, or a pan, or a rolling pin. I am using two plastic bag and a rolling pin. I rolled the tortilla to about 7 to 8 inches wide.  <br> Heat up a cast iron pan or any pan for that matter, and when it is hot, put the tortilla in the pan. Cook on one side a few minutes, and the other side for a another minute or so.   <br> ### And now, the Huevos Rancheros! Prepare the beans, salsa, avocado, jalapeno (you may add cheese and Mexican crema, pica de gallo).  <br> Fry the eggs.  #### Assemble the Huevos Ranchers.
