 <h1><em><strong>Today I will be writing about a new recipe that I enjoy preparing for breakfast and brunch. This recipe is called Breakfast Squares. Which consists of crunchy oatmeal topped with egg bacon filling with a hint of sweetness. I hope you enjoy.</strong></em></h1> <p><br></p> <h1><em><strong>Ingredients</strong></em></h1> <ul> <li><em><strong>1 1/2 cup all purpose flour</strong></em></li> <li><em><strong>1 cup brown sugar</strong></em></li> <li><em><strong>1 tablespoon cinnamon</strong></em></li> <li><em><strong>1 teaspoon baking soda</strong></em></li> <li><em><strong>1 cup of margarine or butter</strong></em></li> <li><em><strong>1 1/2 cup quick cooking rolled oats not instant</strong></em></li> <li><em><strong>24 bacon slices diced</strong></em></li> <li><em><strong>12 large eggs</strong></em></li> <li><em><strong>5 scallions diced</strong></em></li> <li><em><strong>1/3 cup of half/half cream</strong></em></li> <li><em><strong>8 ounce cream cheese, softened</strong></em></li> <li><em><strong>salt and pepper to taste<br> </strong></em></li> </ul> <h1><em><strong>Method</strong></em></h1> <ul>   <li><em><strong>In a medium sized bowl combine the first 5 ingredients, cut in the margarine until mixture is coarse crumbs.</strong></em></li>  <li><em><strong>Add rolled oats and mix well. In a butter coated baking pan add 1/2 mixture and press it to spread. Set it aside.</strong></em></li> <li><em><strong>Cook bacon in large frying pan on medium until crisp. Remove and place on a paper towel to drain any additional oil. </strong></em></li> <li><em><strong>Beat the eggs with half and half cream add the salt and pepper as well. Pour egg mixture into pan cook for about 3 minutes, sitting slowly until almost set. Then remove from heat.</strong></em></li>   <li><em><strong>Add cream cheese and bacon to egg mixture, stir until cream cheese is smooth. Spoon egg mixture over oat mixture and sprinkle chopped bacon and scallion on top. Add remaining half of oats mixture. Press lightly. Bake in 375 oven for 30 minutes or until the top is golden.
