* 1 lb. of fingerling potatoes ( You can use other potatoes if its what you have, I enjoy the fingerlings with these chops because of theyre creamier and a little sweet compared to other varieties.)
* 2 Tbsp of olive oil
* 2 tsp garlic, minced
* 1 tsp paprika
* 1 tsp garlic powder
* 1/2 tsp kosher salt
* 1/2 tsp pepper
* 1/2 tsp season salt
* 1/4 cup fresh parmesan (optional)

 ## Instructions for Fingerlings
* Preheat your oven to 400 degrees.
* Wash the fingerlings to get rid of any dirt on potatoes. Slice all potatoes length wise and then cut those length wise give you 4 "fries" per potato.
* In a large bowl, add potatoes, oil and seasonings. Mix well making sure to get all potatoes covered with oil and seasonings.

* Line a baking sheet with foil, and spray with non stick spray. Lay potatoes out in a single layer on baking sheet so they can cook evenly.

* Pop in oven and let cook for 30 minutes or until fork tender, giving them a stir half way through.
* When potatoes are done remove from oven and sprinkle with parmesan if you would like. And thats it for the potatoes!
