 Being a popular dish in Cantonese area, Rabbitfish does not have a high reputation as other fishes such as salmon and grouper because its special smell, which comes from its food algae. Deep fried seasoned with salt and pepper can cover up most of the smell and can highlight the chewy texture. At reasonable price, this dish is a must-try for me if you are travelling in Cantonese area such as Hong Kong.  Rabbitfish got its name from the face resembles rabbit's face, while to me it is not that obvious. 在广东吃过这种个头不大味道特别的海鱼后就心心念念,可惜在上海一次都没见过。这次在海南的海鲜市场竟然看到了久违的泥猛鱼,因背上标志性的大刺、脸像兔子(所以英语叫做Rabbitfish)很好辨认,意外之喜溢于言表。摊主急于向游客兜售两百块一斤的野生石斑,我却在最角落处挑选只有二十一斤的泥猛鱼。几个操着北方口音的大妈本来在跳选石斑,见状向我请教这个鱼叫什么名字、如何该怎么做好吃,摊主当时的心情一定很无奈。 海边的海鲜市场通常会有个头不大的杂蟹、杂鱼打包出售,反正也卖不出价钱也不值得分拣,一般杂蟹可以煮粥、杂鱼可以煮汤、椒盐。我一起还买了包含一条小石斑的一包杂鱼,也让店家做了椒盐打算打包了夜里做宵夜。 比较下来,泥猛确实跟椒盐是绝配:无鳞无刺、肉质紧实厚实、富有韧性。石斑清蒸更合适,做成椒盐清香鲜甜的特质被掩盖了,反而暴露了肉质有点松散的缺点。而泥猛所谓的有一股藻食鱼类特有的味道,有些地方还叫做臭肚鱼,做清蒸很难去除,椒盐口味重的烹饪方式正好可以消除。 刚煎出来热腾腾的最好吃,鱼皮经过抹盐处理后炸得金黄酥脆,扑鼻而来的是椒盐混合香料的诱人味道。凉了以后鱼肉好吃:更韧更有嚼劲,是个不错的零食。  *** #### All photos are taken by @stacee #### Thank you for reading, following and voting for me! *** 谢谢大家看到这里,欢迎关注,回复和点赞。  ***
