Codfish meatballs.

Delicious, crispy and tasty fish balls. To make them even more pleasant, I serve them with a dressing of fresh tomatoes, oil, salt and parsley or basil.

In a bowl, mix together: boiled potatoes, mashed in a potato masher, cod fillets cooked in a pan with oil, salt, parsley and garlic, breadcrumbs soaked in milk and squeezed, an egg, a few tablespoons of grated Parmesan cheese and salt.

Shape the meatballs, dip them in the egg and breadcrumbs and fry them in hot oil. They can also be cooked in the oven, but press them a little with your fingers to prevent them from not cooking well in the centre.

Prepare the fresh tomato sauce.
