In round figures, skin alone (enclosing a human sized vacuum) has a density of a about 95kg/m^3

Air has a density of 1.28kg/m^3

This means that if you hollowed out the human body to just skin, and filled it with helium, it still would be too heavy to float.

You would need to use an ultra lightweight material cunnincly constructed to look exactly like a human.
