Tinolang Manok or Chicken Broth is a classic Filipino recipe. This is widely popular not only because it is healthy, but also many says that this aids in the increase of breastmilk production especially for mothers who just gave birth. (Like me!).

But since the Philippines is composed of many islands, each Provinces also has their own version. Being said, I have created my own recipe, which is a fusion of different provinces ๐Ÿ˜….

The Ingredients
1/2 kilo chicken meat
1 Sayote (vegetable pear)
Malunggay (Horse Raddish)
Onion
Garlic
Ginger
Tomatoes
Red Bell Pepper
Tanglad (lemon grass)
Patis (Salted fish sauce)
Chicken broth
Water

The Process

Bring to boil the chicken meat until the broth comes out. Set aside.

Saute the garlic, onion, ginger, tomatoes and put the chicken meat until nearly brown. Put Patis or the Salted fish sauce (to taste).

Add the chicken Broth and 2 cups of water. Simmer and add tanglad or lemon grass). This will bring good aroma and taste to the soup. Put the bell pepper, sayote (or you can add green papaya, unfortunately I don't have one.) Simmer until the sayote is tender.

Once almost done, put the malunggay. Don't overcooked the malunggay to retain its nutrients and to prevent a bitter taste.

Serve while the soup is hot!

Mangaon ta! (Visayan term for "Let's eat" )
