KD Nacho Beef Calzone

Money is getting beyond tight around here and I've been trying to use up all the stuff in the pantry and freezer. I had my kids this weekend and I had to be a little more creative than oatmeal, rice and my main goto, beans and eggs. Which has been my staple for a few weeks now. I took the hamburger out of the freezer the night before, I just wasn't sure what I was going to make with it. I saw the KD package and decided, Beef and KD, why not, almost every kid loves nachos and KD. The pizza dough came into effect when I saw the bag of flour and thought, dam, if I'm gonna be homeless soon, I might as well use that up too, I know I have yeast in the cupboard.

So I went online and looked at three pizza dough recipes. More or less all the same so here is what I made my dough with.

#### Pizza Dough
- 1 cup warm water (between 100°-110°F)
- Packet of active yeast or equivalent amount
- 1/2 teaspoon granulated sugar
- 1 teaspoon salt
- 2 tablespoons olive oil
- 3 cups all purpose flour (approximate)

#### Directions:
Nothing fancy here... I added the water, sugar and yeast. let sit for about a minute. then added the oil and half flour until it was  mixed in a large bowl. Then I added more flour till it felt nice. If you want more precise, read up on a few pizza dough recipes. But that'ss all i did.

Make a container of KD. Easy right? If you don't know how to do this, well, your probably under the age of 9 and just move on.

Put hamburger into a pan and cook until brown. Add some nacho seasoning to the hamburger with a cup of water and let it come to a boil. When it boils, turn down heat to low. Once water is removed, it's done. I used nacho seasoning from Costco as it is the best bang for the buck.

As the other stuff was cooking, I spread out the pizza dough after letting it rise for about 15 minutes. Once spread out, I greased a cookie sheet and laid out the pizza dough on the pan.

Everything is cooked and ready. I put a little bit of tomato sauce on the pizza dough, which I don't think is required. Then scoop as much beef and KD on top as you want. Sprinkle a little cheese if you have it. Then fold up like a burrito. Seal the seams as best as possible and put into the oven at 450 degrees and bake for 15-20 minutes.

That's all there is to it. Fast and easy actually, my son said it was his third best new favorite food next to Adobo and steak. So there you have it!
