Hello dear friends, lovers of culinary delights, we continue with potato recipes, taking advantage of the season. Where I live at this time of the year, potatoes are consumed in all its variants, because when the season is over there are no more until next year, except for the pre-fried potato packets, but these are not useful for most recipes. Therefore, today I bring you a new recipe where the main ingredient is the potato: Sour - spicy potatoes.

If you like spicy food, be sure you will love it and the best thing is that you can add the spice of your preference, as well as the ingredients you want to add, because we can make variations and experiment a little according to our tastes. In my case, I added peppers because I love them. As long as I have them at home, I think I always want to add them to every meal. Another main ingredient is the Chinese sauce, which adds a delicious flavor, but that's all there is to it. Below, I show you all the ingredients needed for its preparation and the step by step.

Por lo tanto, hoy te traigo una nueva receta donde el ingrediente principal es la papa:  Patatas agrias - picantes.*

>*Si te gusta la comida picante, ten por seguro que te encantará y lo mejor es que puedes añadir el picante de tu preferencia, así como los ingredientes que quieras agregar, pues  podemos hacer  variaciones y experimentar un poco según nuestros gustos. En mi caso, añadí pimientos porque los adoro. Mientras tenga en casa, creo que siempre quiero agregarlos en todas las comidas. Otro de los ingredientes principales es la salsa china, la cual le aporta un sabor delicioso, pero no se diga más. A continuación, te muestro todos los ingredientes necesarios para su elaboración y el paso a paso.*

As I said, the main ingredient is the potato. I will use 3 small potatoes which is enough for two abundant servings, so depending on the amount you want to prepare, you will have to add more ingredients. I washed and peeled the potatoes, then cut them in very thin slices as thin as possible; I didn't make them that thin because I was in a bit of a hurry. Then, these slices are cut into very thin sticks. Ideally, they should be like noodles for a much faster cooking and as the recipe originally is, but well, I always vary and make them as I see fit. Once chopped, put them in salted water, leave for a few minutes and drain.

Utilizaré 3 papas pequeñas que da para dos raciones abundantes, así que depende de la cantidad que quieras preparar, deberás añadir más cantidad de ingredientes. Lavé y pelé las papas, luego se cortan en rodajas bien finas lo más que puedan; yo no las hice tan finas porque estaba un poco apurada. Después, estas rodajas se cortan en bastoncitos bien finos. Lo ideal es que queden como fideos para una cocción mucho más rápida y como originalmente es la receta, pero bueno, yo siempre varío y las hago como mejor entienda. Ya picadas, se colocan en agua con sal, se dejan unos minutos y se escurren.*

While the potatoes were in water to remove some of the starch, I chopped the spices, the garlic finely and the bell bell pepper and chili bell pepper into strips. You can add fine ginger slices if you have them at home to accentuate the spicy flavor.

Add olive oil or whatever you have at home in a large frying pan. When it is hot, place the potatoes in it and keep stirring so they don't stick. Sprinkle the chopped garlic on top and a pinch of salt, not too much because Chinese sauce tends to be salty. Lower to medium heat and stir constantly to avoid frying the potatoes, we just want them to soften, so we should use little oil. Add the spice of your preference and the amount according to your taste, I only put about 4 drops of habanero chili, because this is very strong.
>*Añade aceite de oliva o el que tengas en casa en un sartén grande. Cuando esté caliente,  colocar las papas en él e ir removiendo para que no se peguen. Esparcir el ajo picado encima y una pizca de sal, no mucho porque la salsa china tiende a ser salada. Bajar a fuego medio  y remover constantemente para evitar que se fríen las papas, solo queremos que se ablanden, por eso debemos echar poco aceite. Añadir el picante de tu preferencia y la cantidad según tus gustos, yo solo coloqué unas 4 gotas de chile habanero, pues este es muy fuerte.*

After stirring, I added the Chinese sauce, which will give a rich flavor and color to the dish. I added the peppers and chili peppers chopped in strips and continued sautéing. Finally, I poured 1/2 cup of vinegar and let it reduce; by the time I finished, the potatoes would be soft.

To decorate, I chopped some leek garlic leaves and sprinkled them on top of the preparation.

And this is how this delicious dish of sour-spicy potatoes is finished, a new recipe for me that from the moment I tried it became one of my favorite ways of making potatoes, for that mixture of flavor between sour and slightly spicy, which if you feel it, of course, depends on the amount of spice you add.
