Hello everyone! A little while ago, the whole family had a run in with a series of sicknesses. There was both a viral and bacterial-based flu, a tummy bug and who knows what else? The South African Minister of Health was on the radio the one morning announcing this winter's flu season is seeing some Covid strains, influenza type A1 and the H1N1 virus doing their rounds and there are patients in hospital with pneumonia. There was a time where everyone in the house, save for me, got a horrible tummy bug plus nausea. They were experiencing nausea at most food and smells and some of the family members... let's just say it was severe. I needed to come up with something that they could all eat that would not trigger their nausea and would be healthy for them. So I did a bit of researching. Looking at list after list and recipe after recipe... then I went to the shops and bought ingredients that were available from those lists and recipes and created my own. And thus I made the Scrambled Egg and Spinach on bread! The idea is that soft bread and soft, fluffy scrambled egg won't scratch or annoy the throat. The spinach and spices are on the low-nausea list but on the good for health and recovery list! Combo! ## Ingredients: Eggs - around 3 per person Spinach - I needed a whole bush for 5 people Bread - 2 Slices each - any is good. Fine Ginger - to taste Ground Turmeric - to taste Margarine or butter (not cooking oil!) ## Method: First things first, I bought a bushel of raw spinach so I rinsed the leaves and then cut the stems. I do this by coring the leaf, cutting a V so the hard spine of the lead is out. I ate a lot of them raw as a snack while I worked.  Then it is into the pan. The volume of the leaves is huge so I needed to add in the second batch later because it would not all fit into the electric pan. It is noteworthy to mention not to use cooking oil of any kind, even olive oil. Oily food will kick that vomit reflex up and cause upset. So some butter or marg is good.  Then it is time for some Ginger and Turmeric. Sharp or hot spices would also upset the stomach but these are on the healthy and good list! How much do you put in? I cut the corners off the bag and started sprinkling... I subscribe to the idea of "letting the ancestors guide you" approach here. You need to be able to gauge for yourself based on the volume of food that you have and what would be enough.  Not this spice gets stirred in and cooked through. The volume of the spinach drastically shrinks.  This is the result. On to the next ingredient...  I wanted to do a fully mixed or marbled scrambled egg. Not too cooked up and a bit soft and fluffy. I will also be adding the spinach to this so it is crucial to be attentive to the pan and the egg. Again... I did not use oil... Marg instead.  You want to add the spinach in **before** the egg is cooked to the level you want it and mix them together.  Finally, I served it all on bread. I cannot remember... but I do not think it was on toast. The hard edges of the toast would have been a no-no for the delicate tummies.  So this was supper!  The whole project was a success. Everyone managed to eat their food and not "eject" it out. Which they only experienced when they started to eat other stuff so this meal is definitely on the "Safe" list for that sort of condition!
