Bird's Weeding Day Cake
Rustic polenta cake with forest berries, flavoured with thyme and decorated with rose petals.

Here we don't really celebrate Valentines day, but we get all romantic a bit later for the Saint Gregory's Day. We say it on this day that "the birds are getting married."
I got inspired by birds falling in love and I made a cake to celebrate birds weddings and the early end of winter.

Our grandmothers and great-grandmothers would be able to tell us exactly, what bird's wedding day really meant. 
It was associated with longer days that brought with it more daylight. People were able to work in natural light for a longer period of time and no longer just by candlelight or later by kerosene lamp. Thus it was sometimes said that St. Gregory throws the light into the water.
On this day, it is a tradition to have snacks hidden in the bushes for the children to find. People make colorful candles on miniature boats and send them down the river in the evening.

### Ingredients for the cake:
- 700 ml of soya milk
- 3 tablespoons of flax seeds
- 150 g of cornmeal
- 100 g of ground walnuts
- ¼ teaspoon of salt
- 1 tablespoon of dried thyme
- 4 tablespoons of almond syrup
- 30 g of margarine (and a bit more for greasing the tray)
- 30 ml of olive oil

### Ingredients for the topping:
- 150 g of mixed forest berries: raspberries, cranberries and blueberries
- 2 tablespoons of almond syrup
- 1 tablespoon of rose petals
- a few twigs of fresh thyme

### Preparation:
1. Mix all dry ingredients in a bowl; cornmeal, walnuts, flax seeds, salt and thyme.

2. Pour soya milk, almond syrup, margarine and olive oil in a saucepan and bring it to boil.
3. Add dry ingredients to the saucepan and simmer at very low heat for 5 minutes. Stir constantly.

4. Pour the mixture into the greased baking tray and place it in a preheated oven at 190°C for 40 minutes.

Cool it down, before taking it out of the tray.

5. Put mixed forest berries in a saucepan and add almond syrup. Simmer it for about 5 minutes or until the sauce thickens up. Stir constantly. Cool it down a bit before topping the cake.

6. Spread berry sauce on top of the cake. Decorate it with rose petals and a few twigs of fresh thyme.
