Hi friends,
Good evening from my side of the globe, its a wonderful Sunday evening, Glad to share with you my weekend experience on how i improvised to make my friend a birthday cake, though the birthday is actually in Arias but i had to do it since she came around after a pretty long while.
<center>**My recipe for 1kg fruit cake and butter icing**</center>
**The cake baking**
- 4*250g cooking butter = 1kg
- 1000g of flour (all purpose)
- 700g of sugar
- 13 eggs
- 2 T spoons of baking powder
- milk flavor
- Vanilla extract
- nutmeg
- browning
- mixed fruit
**The icing decoration (butter icing)**
- 500g of icing sugar
- 250g of butter
- Food color (Red)
I had planned to make a cake for her but on her birthday but since she was not around, i could not do so but when i got the information that she is around i had to give her an invitation, though the time was very short and again there was no tools to help get it done fast, so i had to improvise as an engineer to get the job done and it was successful.
The creaming process of the cake was manually done, the 700g sugar and 1000g butter was poured into a plastic bowel by a friend @eminentsam48 who took about 48 minute with the help of the spatula. he did turn it in same direction until the mixture became cream in color, this also can always be done with mixer but since i don't have one yet, I have to cream it manually.

**Mixing of all dry ingredient**
This is the mixture of all the dry stuffs like, flours, nutmeg, baking powder and dry flavor, then turned it till its completely mixed together.
**the liquid mixture**
Blending the eggs was also done manually, after breaking those eggs into a bowel, I used an egg whisker to whisk it to the desired texture.
I mixed all the liquid ingredient together then i began to add the dry ingredients and carefully turn it to it desired texture. after this ,the cake is ready to be baked.
I am using the love shaped pan, so i had to cream the pan and dust it with flour, for easy removal from the pan.
Also there was no oven but the need for the cake was not to be played with, so i had to improvised a local oven, the way of baking without an oven.
I had to set up firewood sport for burning, I put sand in the pot, and preheat the pot on the fire then put a separator to lift the pan from the sand.
butter icing
This is creaming the butter and icing sugar together, then i added the Red color to get the design and also the desired beauty.
