 烧素鸡的精髓就在于炸好后泡水,这个泡水能把原本比较硬的素鸡泡得内部组织全部变蜂窝状。扣肉的炸皮、虎皮鸡爪等都是同理,炸过后泡水都会使其内部软糯。 准备食材:素鸡、开水、生抽、老抽、盐、蔬菜鲜、糖、桂皮、八角、葱、油。  1)素鸡切厚片,起锅倒油,大油锅,开中火,把素鸡一片片放入炸,炸至两面金黄起泡。 2)此时准备一个大碗,倒入开水,放入一点点八角桂皮泡上,把炸好的素鸡放入开水中泡。 3)不要让它露出水面,泡它个20分钟。 ![Uploading image #1...]() 4)再次把素鸡连水一起倒入锅中,放入生抽、老抽、盐、蔬菜鲜、糖调味,煮开后滚5分钟,撒上葱就完成了。 这样烧的素鸡和外面卖得一模一样,按步骤烧你也是大厨!👍 👍 👍
