Cooked a Foo Chow Dish - Fermented Red Yeast Pork Slices
Have been wanting to cook this for the longest time because I have not eaten this dish for ages. The hometown where I am from, has a huge variety of Chinese food and among the different Chinese food, they also branch out to different dialect groups' food. Though I am not a Foo Chow, I grow up surrounded by many Foo Chow food such as this dish.

**What is Fermented Red Yeast?**

Different from red rice, red fermented rice (also known as red yeast rice, monascus, hong qu and angkak) is not consumed as a staple. It has been used as food colourant, flavour enhancer, for meat preservation and wine brewing in Asia for centuries. Traditionally, red fermented rice is used in furu, rice wine, and some Chinese cuisines.

So it is actually a flavour enhancer and it does have the fragrance of a rice wine.

➡️ Pork fillet
➡️ garlic
➡️ ginger
➡️ fermented red rice yeast paste
➡️ soy sauce
➡️ white pepper


HERE IS HOW I cooked the read yeast paste given by a friend who came over to visit 

**First Step: I added garlic and ginger into the oil.**

**Second Step: I added in the marinated pork slices.**

**Third Step: Fry up the pork slices till they are cooked thoroughly. Mine still needed to be cooked a while more.**

**Fourth step: Add in some water not to immerse the pork slices but just to cover a bit of the pork. Then add in the red rice yeast paste.**

IT WAS SO YUMMY THAT I added my rice though I usually do not eat much rice. 🍚🍚
