 蕨菜,老祖宗一辈一辈吃过来的菜,这么美味的菜,怎能不吃呢? 不知道是从什么时候开始,专家说不能吃,吃了致癌。漫山遍野的蕨慢慢被怠慢,我也不怎么买了。怕年轻人说我不懂科学。但心里一直不服。😂😂 昨天,媳妇提回来一把蕨,多半是别人送的,她一般是不买菜的。菜来了我就做。按照老祖宗的做法来处理,我相信这样做是有科学道理的,是安全的。至于不能过量,放心,谁也不会当饭吃。  先将尾稍去掉,老的去掉,洗尽。  焯水,这样能去掉有毒成分。我们平时吃的艾草也是有小毒的,谁也不会直接吃,都会先焯水。 切成小段,干锅煸炒。这一步一定要,否则粘液太多,影响口感。估计这一步也能有效去毒。  煸干粘液,铲出洗锅。重新烧锅放佐料。有人放腊肉炒,有人放新鲜瘦肉,我喜欢瘦肉,再加点红椒、蒜末、香葱就很好了。我家吃匠们是吃得不亦乐乎的。
