Making sweet yam with coconut
# Greetings, 

Dear friends, I hope you have had a productive Holy Week, whether it was dedicated to the festivities, a walk or a rest.

In my house we dedicate these days in part to thank God for everything and to dedicate time to some traditions of the country, usually we always make rice with coconut, but this time I dared to prepare something different and that is customary to prepare in Colombia which is a sweet yam with coconut.

This sweet here in Venezuela we know it as majarete but instead of yam we use corn flour, I in search of a more organic food I dared to prepare it as the Colombian brothers with yam.

So join me to prepare it.

It is a fairly simple recipe and only requires 2 main ingredients which are the yam and coconut, and to accompany the flavor we use some cinnamon, cloves and sweeten with paprika or panela.

The first thing we are going to make is the coconut milk, for this we must remove the water from the coconuts we are going to use, in my case I used one coconut for 2kg of yam.

We take out the water and reserve while we take the coconuts out of the shell.

Then we take the coconut water and the coconut and blend it to move it, once we see that the lumps are very small we turn off the blender and strain the liquid.

If your coconuts have little water you can blend with filtered water and you also get the milk.

We reserve our milk in the refrigerator while we peel and parboil the yam to soften it.

Once the yam is soft we let it rest until it is at room temperature and knead it to remove as many lumps as possible.

The next thing is to take a pot and put the coconut milk on the fire with a cinnamon stick, four cloves and the amount of panela or papelón of your liking to dissolve.

Once the papelón is dissolved in the coconut milk add the yam mass and beat to make a single mixture and let it boil until it begins to reduce.

We are stirring constantly so as not to burn the bottom until it is like a very thick delicacy, this process is similar to preparing jelly is ready when it comes off the pot.

Finally, all that's left is to serve and let it cool to harden and enjoy our delicious and healthy dessert.

I served it in two ways, one in a tray to cut it into pieces and the other one in the coconut shell to eat with a spoon.

To garnish the dish we can cover the surface with cinnamon powder and that's it.

Queridos amigos espero que hayan tenido una productiva semana santa ya sea dedicados a las festividades, de paseo o descanso.

En mi casa dedicamos estos días en parte a agradecer a Dios por todo y para dedicar tiempo para algunas tradiciones del país, por lo general siempre hacemos arroz con coco, pero en esta oportunidad me atreví a preparar algo diferente y que se acostumbra a preparar en Colombia que es un dulce de ñame con coco.

Este dulce aquí en Venezuela lo conocemos como majarete pero en vez de ñame utilizamos harina de maíz, yo en búsqueda de una alimentación más orgánica me animé a prepararlo como los hermanos colombianos con ñame.

Así que acompáñame a prepararlo.

Es una receta bastante sencilla y solo requiere de 2 ingredientes principales que son el ñame y el coco, y para acompañar el sabor utilizamos algo de canela, clavo de olor y endulzamos con papelón o panela.

Lo primero que vamos a realizar es la leche de coco, para esto debemos sacar el agua a los cocos que vayamos a utilizar, en mi caso utilice un coco para 2kg de ñame.

Sacamos el agua y reservamos mientras sacamos los cocos de la concha.

Luego agarramos el agua del coco y el coco y lo licuamos para moverlo, una vez que vemos que los grumos son bien pequeños apagamos la licuadora y colamos el líquido.

Si tus cocos tienen poca agua puedes licuar con agua filtrada y también obtienes la leche.

Reservamos nuestra leche en la nevera mientras pelamos y sancochamos el ñame para que se ablande.

Una vez que el ñame está blandito lo dejamos reposar hasta que esté a temperatura ambiente y lo amasamos para eliminar la mayor cantidad de grumos.

Lo siguiente es agarrar una olla y poner la leche de coco en el fuego con una rama de canela unos cuatro clavos de olor y la cantidad de panela o papelón de tu agrado para que se disuelva.

Una vez el papelón este disuelto en la leche de coco le agregamos la masa de ñame y batimos para que se haga una sola mezcla y dejamos hervir hasta que empieza a reducir.

Estamos moviendo constantemente para que no se queme el fondo hasta que quede como un manjar bien espeso, este proceso es similar al de preparar jalea está listo cuando se despegue de la olla.

Ya por último solo queda servir y dejar enfriar para que se endurezca y poder disfrutar de nuestro rico y sano postre.

Yo serví de dos maneras uno en una bandeja para cortarlo en trozos y el otro lo servi en la concha del coco para comer con cucharilla.

Para adornar el plato podemos cubrir la superficie con canela en polvo y listo.
