Homemade Strawberry Jam 🍓

I’m entertaining the idea of opening my own homemade Jam company. Over May and June I spent a lot of time making Guava Jam from our very own Guava tree but now I’m venturing out and testing a few other flavours to find our winners. 

I’ve found some basic recipes that I really love so you’re going to see them rolling in over the next few days. 

I thought I’d start with everybody’s favourite…
## Strawberry Jam
**INGREDIENTS**

1 kg fresh Strawberries 
3 cups Sugar
1 Tbsp Lemon juice

**METHOD**

* Hull the strawberries and chop them roughly

* Place the chopped strawberries, sugar and lemon juice in a thick bottom pot and bring to the boil.

* Boil for two minutes on high heat and then reduce to medium-low heat

* Use a masher to mash the fruit chunks smaller if desired for a smooth jam or leave it chunky and enjoy.

* Simmer for another 20-30 minutes until the jam begins to thicken and get richer in colour. 

* Test the jam by putting some mixture on a cold plate and put in the fridge for 2 minutes. It should be gooey and sticky to the touch. If still quite runny then continue boiling for a few minutes and then do a test again.

* Sterilise the jars (a run through the dishwasher is sufficient) and allow them to dry completely prior to starting your jam.

* Carefully spoon the hot jam into the sterilised jars, wipe down the edges with a clean paper towel and place the lid on tightly.

* Refrigerate the jars and the lids will seal on. 

**This jam has less sugar than most jams and needs no additional pectin to thicken. It is naturally gluten free, dairy free and vegan.** 

I am so happy with the outcome of this jam and can’t wait for my family and friends to give it a try.
