This sweet dessert is very popular in my home country - Lithuania. And we call it "The lazy man" or "The lazy cake" 😃 It is because even lazy people can make it, you don't need much preparation, much effort or many ingredients. And I didn't know how to name it properly in English, so I Googled and I found that originally it was "invented" in Italy and is also called "Chocolate salami". But I prefer "The lazy man" 😁  It is perfect for any occasion, whether you want a dessert for yourself, for your family/friends or to have something sweet on your Christmas table. 🎄 Once you make it, it can be stored in the fridge for a few days - I even stored it for a week or so and it was fine 👌 I think you could also freeze it but I didn't try this option so can't 100% recommend this 😃  In my country we have quite a few variations of this dessert - you can make it very simple and plain as I made it in this recipe - this is the most common and traditional way of making it. But if you are feeling extra, you could add some dried cranberries, other dried fruit, other mashed cookies, use white chocolate instead of dark, etc. The possibilities are endless 😃 But I highly highly recommend trying it if you haven't already - it is really tasty, easy and it certainly looks beautiful 😁 ___ **You will need:** * 180-200g. dark chocolate (2 bars, not the one with very high cacao percentage (50-70% of cacao would fit)) * 370 g. plain cookies - check that they would be vegan and plain, like tea biscuits, of course, you can buy them with flavor if you wish (vanilla, etc.) (I used 2 packs) * 200 ml. coconut milk (the solid part from the can (like cream)) * 100 g. plant-based butter (I used vegan margarine instead)  ___ **Preparation** 1. Break all the cookies with your hands into a large container. The pieces should be smallish. You can also do it by smashing them with a jar; putting them in a bag and rolling them with rolling pin. I simply use my hands.  2. Break the chocolate bars into pieces (if they are already small, you can skip this), put them in a small pot, add the vegan butter/margarine.  Put it on a low heat, stirring constantly, until everything melts into a smooth mixture.  When everything is melted, add coconut milk, mix and also wait until the mixture is smooth. Then remove from the stove.  3. Pour the melted chocolate mixture on the broken cookies and mix well until all cookie pieces are covered in chocolate mixture.  4. Line the chosen container or baking tray with baking paper (12x22cm wide and 6cm deep baking tray was used here).  And pour the entire mixture in it. Smooth the surface and keep the dessert in the refrigerator overnight.  5. In the morning, take it out of the dish together with the baking paper and you can keep it on a plate or cut it in pieces; store in the refrigerator whenever you are not eating it.
